Alexyz 263b0c1b64 fix: Update ports to avoid conflicts with existing Docker projects 
- Change Gitea port from 3000 to 3001
- Change API port from 8080 to 8082
- Change Nginx port from 80 to 8083
- Add docker-compose.override.yml for local development
